Chana masala (also known as chole or chole masala) is a North Indian and Pakistani dish in which the main ingredient is chickpeas. It is fairly dry and pleasantly spicy with a sour citrus note. Popular mainly in the Punjab in northern India and in Pakistan, notably in the regions of Gujarat and Sindh. In the Gujarat and Rajasthani areas, it is commonly cooked dry, with tangy spices.
